Rinse the pork in cold water. Add 300g of water, green onion, and ginger to a pot and boil. When the pork is cooked, strain through cheesecloth.
In a pot, add 300g of water and when boiling, add bonito flakes and boil for 1 minute. Turn off the heat, let the flakes settle, and strain. Add another 300g of water with the strained bonito flakes and simmer on low for 10 minutes. When settled, strain again through cheesecloth.
Combine the pork broth and bonito broth. Set aside 200g, add braising seasoning, boil, add the pork, and braise.
Boil the ramen noodles, rinse in cold water, and drain. Finely chop the chives.
Bring the broth to a hot boil. Place the ramen noodles in a bowl, pour the hot broth, top with the braised pork and chives, and drizzle with the remaining braising sauce.
