Slice the salmon with a pointed edge.

Wash the rice, soak for 30+ minutes, cook, and let cool.

In a pot, add vinegar, sugar, a little salt, and water in equal amounts. Boil, cool, then mix into the rice evenly.

Coarsely dice the carrot and shiitake mushrooms, lightly stir-fry, and mix into the cooled sushi rice.

Mix wasabi powder with warm (30Β°C) water and let ferment. Shape the sushi rice, spread wasabi on top, and place the salmon. Plate.

Soak sprouts and parsley in cold water, drain, and place beside the salmon sushi.
